ASHBOURNE will soon be the place to go for tapas and other Mediterranean delicacies when a pop-up restaurant opens its door for the summer.
Union Street Cafe will hold an opening party from midday on Saturday, June 14 in the Green Man courtyard.
Owner Nick Taylor, 36, said: “ I have always had a love of food and have been lucky enough to have worked in the food industry for the last 12 years.
“I worked with some amazing producers in Italy and Spain, and I wanted to find a way to let more people enjoy this amazing food.
“So I called Myles Mellor, an old school friend from Ecclesbourne, who likes challenge.
“He already had a cafe in Bakewell – so he was an entrepreneur with catering experience…perfect.
“The next challenge was the food, how could we make something unique, really high quality, different but above all delicious?”
The pair spent six months creating the cafe’s menu, testing their food on friends and family to make sure they got it right.
Nick said: “Myles managed to get us a last minute spot at the Bakewell Christmas fair last year so we could get the public’s reaction.
“We set up on a cold winter morning, and at eight o’clock in the morning I got a call from Myles telling me we had a small problem. No electricity. Disaster.
“Amazingly he managed to sweet talk the Co-op and we plugged into their exhibition trailer next to us…life saver.”
“The BBQ was lit, ovens turned on and we officially opened for business.
“What a day, we not only served everyone within five minutes of ordering but we survived a lunchtime rush, everyone got their order and all our customers seemed very happy.
“Day two was an even greater success, confident in our process we gave every customer a card with two options, loved the food or try again – we had a 100% positive feedback.
“These early discussions and feedback from our customers would proof vital in the development of our cafe for Ashbourne.”
The cafe will serve a selection of Spanish food. On the menu will be pizza boccas with a variety of toppings including grilled marinated Spanish chicken, grilled Italian mackerel, Serrano ham, Manchego cheese, grilled chorizo and semi dried tomatoes.
Nick said: “Something we are proud of is we know exactly where all of our produce is coming from.
“I have been lucky enough to have visited many of the factories in Italy and know how much care and attention goes in to producing the highest quality products.
“We will be serving a tapas menu with delights including cream cheese wrapped in speck ham, chargrilled artichoke salad, red peppers stuffed with cheese and Nocellara olives, we will also be serving Areopress coffee - hand pressed espresso which is unique to Ashbourne, with a selection of Italian biscuits and cakes.
“Oh and a freezer filled with genuine Italian gelato - ice cream - is on its way from Italy.”
